This is a flake-type kale roux made with Shinjuku Nakamuraya's traditional original spices. The aroma of the spices and the flavor of the ingredients such as vegetables and fruits are brought out by slowly kneading the flakes over direct flame roasting, resulting in a mellow flavor.
