On utilise du lait Jersey à 100 % provenant de vaches Jersey rares, qui ne représentent que 0,8 % du nombre total de vaches laitières au Japon. (Le lait de Jersey a une teneur en matières grasses et en protéines du lait plus élevée que celui de la race Holstein, et se caractérise par un saveur intense, une saveur douce et un lait corsé à l'arrière-saveur pur.
